MONTREAL - Having tasted the wares of some 20 food trucks assembled at the Olympic Stadium this month, I had a chance to see just what's ahead on the food truck scene. Here are some impressions I came away with, as well as some recommendations from a few food truck veterans. Diversify: All the food truck owners I interviewed agreed that the only way for a truck to be profitable is to diversify the offer. The truck alone is not enough. Street food is all about getting fed fast, so if it's going to take 25 minutes before you get that $9 chicken sandwich, customers will eventually opt for quicker ways to get lunch before heading back to the office. Cut corners where needed be but don't make mistakes: Coffee served from a food truck need not be ground to order, that fancy bit of mayonnaise foam won't taste like much if your siphon breaks down after the third customer, and that pogo you're frying on-site had better be cooked inside or it will end up in the garbage. Like mine. Cost matters: Sorry, that $6 grilled cheese sandwich that took 25 minutes to prepare and is the size of a playing card just won't cut it. Be there: Your truck needs a face, needs a person customers can identify with, needs you! It's normal that you can't be there all the time, but every so often, get behind the counter and say hi to the customers so they can remember what a great girl or guy owns this truck.
