Photograph by: Dario Ayala , The Gazette Editor's note: We want to know what you think of the food trucks now circulating around downtown Montreal. Use the hashtag #mtlfoodtrucks on Twitter and Instagram. MONTREAL - Having tasted the wares of some 20 food trucks assembled at the Olympic Stadium this month, I had a chance to see just what's ahead on the food truck scene. Here are some impressions I came away with, as well as some recommendations from a few food truck veterans. Diversify: All the food truck owners I interviewed agreed that the only way for a truck to be profitable is to diversify the offer. The truck alone is not enough. Festivals can be great for exposure, yet the amount demanded by organizers can be high, up to 42 per cent of sales at the Grand Prix. guild wars 2 gold Ouch. Instead, food trucks should be looking to cater events where the truck is used to prep food rather than have guests line up. Also, consider that prep kitchen you're renting as a possible restaurant or catering location. Both Grumman 78 and The Satay Brothers (at the Atwater Market) have transformed their prep-kitchen space into restaurants for the off-season. Think of the ladies: 70 per cent of Vancouver's Roaming Dragon's Facebook followers are women, and owner Jason Apple says the majority of his customers are women. So don't make the portions awkward to eat with elegance, and consider the woman walking down the street sampling your sandwich without it dribbling all over her blouse. And please, add a salad option on your menu for those of us who don't want to eat like a lumberjack. Lineups aren't always good: Yes, lineups can be a sign of popularity, but they can also indicate a disorganized food truck. Street food is all about getting fed fast, so if it's going to take 25 minutes before you get that $9 chicken sandwich, customers will eventually opt for quicker ways to get lunch before heading back to the office. Cut corners where needed be but don't make mistakes: Coffee served from a food truck need not be ground to order, that fancy bit of mayonnaise foam won't taste like much if your siphon breaks down after the third customer, and that pogo you're frying on-site had better be cooked inside or it will end up in the garbage. Like mine. Cost matters: Sorry, that $6 grilled cheese sandwich that took 25 minutes to prepare and is the size of a playing card just won't cut it. guild wars 2 gold Personality: Smile, talk to me, say thank you and come again when you hand me the change. And if I ask you for a fork to help tackle that oversized pulled pork sandwich, find me one. Live up to the hype: Dear Mr. Star Chef, make sure the food you're selling from your snazzy new food truck lives up to your reputation or risk harming your brand. Not too junky, nor too meaty: The city has made an effort to keep junk food out of the Food Truck equation. But that big beefy sandwich, smothered with barbecue sauce and caramelized onions served on a spongy white roll probably has more calories than a Big Mac. Be there: Your truck needs a face, needs a person customers can identify with, needs you! It's normal that you can't be there all the time, but every so often, get behind the counter and say hi to the customers so they can remember what a great girl or guy owns this truck. gw2 gold Quality: In the end, you can have the coolest truck, a lot of hype and a supermodel up front taking orders. But if the food's lousy, I'm not coming back. xboter 2014
